The Off Duty Chef ventures beyond the kitchen to his parents' home in West Kerry, where he explores the coastal and countryside surroundings that have inspired some of his favourite dishes. From seafood chowder with stout-enriched brown bread to grab-and-go sausage rolls, warming lamb hotpots, seasonal asparagus – and a go-to chocolate cake that he bakes for his mum, Mark champions simple food as he makes even the most traditional and everyday staples feel special.
