Her cooks are on hand with suggestions that will make any tummy rumble, from a crisp cherry and almond traybake with a soft frangipane topping to a beautifully light sponge, bejewelled with nectarines and raspberries and a sprinkling of flaked almonds.
But more than that, Mairi samples a sin-free cake. The wonderfully light angel cake contains almost no fat. That is until you add a generous helping of cream and fresh fruit. And Mairi also creates the afternoon tea classic, bakewell tart, which is a prerequisite to any tea party.
