We begin by rolling into Los Angeles for a taste of Central America at Lidia's Dominican Truck, serving authentic Dominican delights such as pernil roasted pork with maduros and wasakaka chicken with arroz con guandules. Then we get globally inspired at the Gastronomo Vagabundo truck in Toronto, Canada, where world cuisine is fused into dishes that are out of this world such as a Pickled Lamb Tongue coated with Egyptian dukkah and a tempura fish taco with Trinidadian hot sauce. Next it's a trip to Austin, Texas, for some classic fish and chips at the Bits & Druthers truck with fish coated in the crunchiest beer batter around. Finally we cap it all off with a trip to Washington, D.C., to meet and eat with The Fojol Brothers, a traveling carnival of Ethiopian-inspired cuisine such as beef berbere and collard greens with injera bread.
